Magazine Cuisine: Episode 9

Bring on the seasonal produce!! This week we tried a recipe for Roasted Asparagus and Balsamic Tomatoes courtesy of the April edition of Cooking Light. I swear we do get a bunch of other magazines, but what can I say---Cooking Light is king when it comes to recipes that look good to me.

I mean--look at this:
So. Freaking. Tasty. I could have eaten the whole plate--which would have resulted in a serious stomach ache and equally as serious--smelly pee for a week.

Anyway, this is the easiest recipe ever. If you want the recipe click here. We did decide to grill the asparagus instead of roast since we had the grill fired up, and I personally perfer grill asparagus.

Essentially it can be boilded down to this:
1) Grill asparagus.
2) Half Tomatoes and throw in skillet with olive oil, garlic, balsamic.
3) Top with goat cheese.

Viola. Delicious, won't-fail-you side-dish to your summer grilling! Try it...you won't be sorry!

Even though every time I comment first, I get labeled the "comment killer" I have to say this: This was ridiculously easy and delicious, the tomatoes tasted like candy!

comment killer??? I've been grilling asparagus all winter. Gonna have to try the tomatoes and goat cheese. Are there different kinds of goat cheese - I mean look at all the different cheese from cows...
